Proteases are protein-degrading enzymes that are supplemented in swine and poultry diets to degrade proteins stored in diverse plant feeds and proteinaceous anti-nutrients in plant proteins. Seeds of legumes, such as soybean, contain large amounts of storage proteins. During the seed development stage, plants reserve the seed protein where it is used by the budding embryo as a nitrogen source during germination. These are storage proteins, which bind to starches and carbohydrates present in the feed. Especially for piglet and young chicken, endogenous protease secretion is insufficient. Exogenous protease supplementation is helpful in degrading storage proteins, thus making the bound energy-rich starch available to the animal for digestion.

Protease is a kind of active animal feed protease, whose action spot lies inside the peptide chain, and it can rapidly degrade the protein to oligopeptides or amino acid. The range of the substrate specificity is relatively wide which allows it to efficiently degrade the antigen proteins in the vegetable materials.

1 unit of Neutral Protease equals to the amount of enzyme, which hydrolyzes casein to get 1 μg of tyrosine in 1 min, at 30℃ and pH 7.2.
